Prepare your 9/10 inch square tin by lining it with parchment paper.
Weigh the ingredients
Place the honey and sugar in a deep pot
Turn the hob to a low heat and begin to heat the mixture. You need to heat it like this until the sugar dissolves - be patient. If you heat it too fast it can burn.
When the sugar has dissolved turn to a medium heat and let it bubble.
Let it continue to bubble until it changes colour to a rich golden colour. It will happen.
Immediately remove it from the heat and add the bicarbonate of soda really quickly and stir in. You will see it froth up. Then quickly pour into your prepared tin.
It will set within a few minutes and is ready to use straight away.
Store it by wrapping it in the parchment paper that you used in the tin.
